French Onion Soup - YUM!

We tried this new recipe on Friday and loved it!

1 tsp. olive oil
3/4 lb. onion, halved and thinly sliced (about 2-1/2 cups)
1/4 tsp. sugar
2 T. flour
3-1/2 cups beef broth (regular, lower sodium or certified organic)
1/2 cup red wine
4 slices french bread, toasted
1/2 cup shredded swiss cheese

Heat oil in saucepan. Add onions. Cover and cook on low heat for 15 mins. Uncover.
Add sugar and cook over medium heat for 15 mins. or until onions are golden.
Add flour, cook and stir for 1 min. Add broth and wine, then heat until boiling. Reduce to low and heat for at least 10 mins. (I simmered for about an hour on low.)
Divide soup among 4 bowls. Top each bowl with toasted bread and shredded swiss cheese. (I place the bowls under the broiler for just a few minutes to make the cheese warm and bubbly.)

Gingerbread House



We made a gingerbread house tonight with leftover Christmas candy and valentine candy. We all helped out and we are really pleased with the end result! I think our favorite feature was the "Joker" snowman out front. LOL.

Julia lost her first tooth!












Julia lost her first tooth this week.
The tooth fairy generously left her $1.00.
